restaurant cleaningRestaurant cleanliness is vital for the safety of your food, customers and employees. Keeping that commercial kitchen clean is no easy task. Knowing restaurant cleaning frequency for key areas in your bsuiness can make the process easier and quicker.

Below are restaurant cleaning tasks that need regular attention. Please note that this is not an exhaustive list, nor is it replacement for what your business, health department or other ordinances require. Some restaurants might need to clean certain areas more frequently depending on traffic and soil. This list is just a suggestion.

Throughout Every Shift

  • grill squeegee action2Brush the grill between cooking red meat, poultry and fish
  • Wipe down and sanitize line prep areas
  • Clean and sanitize cutting boards in between tasks (such as cutting raw meat, poultry, fresh vegetables, etc.)
  • Change sanitizing water/solution and cleaning rags
  • Clean any greasy, wet or soiled areas on the floor
  • Empty trash bins

After Each Shift

At Least Once a Day

  • Clean the grease trap
  • Change foil linings in the grill, range and flattops
  • Wash hood filters

At Least Once a Week

At Least Once a Month

  • Wash behind the oven, stove, fryers and other equipment and remove any grease buildup
  • Clean freezers
  • Empty and sanitize ice machines
  • Wash walls and ceilings
  • Wipe down the dry storage area

At Least Twice a Year

  • Clean your exhaust hoods (this might require a professional)
  • Clean pilot lights on any gas equipment (follow manual or hire a professional)
